The main disadvantage that I see is the quarter-laundry machines were pretty easy to modify so that you didn’t need to pay them. The whole app thing appears to be a lot more difficult to hack, the coin machines can be disabled with a screwdriver.

They just haven’t practiced it. If you’re a good cook, you absolutely have capacity to be a good baker, because they’re only semantically different things. If we called it cooking a cake, no one would draw this distinction, and some other languages/cultures don’t.

Pretty interesting history, actually. They were more or less brought over from Japan by Japanese immigrants, but adapted to American tastes and ingredients (sweeter, and wheat rather than rice – the Japanese ones are more like rice crackers). During Japanese Internment, production was taken over by Chinese immigrants and they’ve been associated with Chinese-American food ever since.
